Fruits of my labor this week....
I finally got around to taking pics of some stuff I make in class. Still need to work on my piping skills (my hand keeps shaking!), but overall, not bad for a novice… Sorry I didn’t get a chance to resize the pics yet.
This is a Chocolate Passion Mousse cake on a layer of Jaconde with a passion fruit mirror center and chocolate spray coating.
This is the same as the above, except it’s on a Chocolate Hazelnut Daquoise, no filling and with a dark chocolate glacage (I decorated this one…kinda looks like a Hostess cupcake.)
This is a 2-layer mousse cake: Raspberry & Cream Cheese Bavarian cake on a layer of almond cake with a raspberry mirror center, topped with a raspberry glaze.
This is the same as the above, except the layers are reversed, no mirror and it’s coated with white chocolate spray (I did this one, too!).
Ok, I think I’m ready to take on my nephew’s first birthday cake!

OK, maybe I should start tasting in class....my friend just told me the chocolate passion mousse was really sour....at least it looked good! weird...chef said it tasted good... =(

yep...we call all the culinary/pastry instructors 'Chef', like 'Professor'.

I hired this guy 3 months ago, and just made him manager. I think it was because he was an executive chef before. Once a week he cooks on sundays and we pork out! you're gonna make a guy lucky someday.

Bleah...that's where you're wrong, my friend....I've nto a single creative bone when it comes to decorating or plating....my skills stink and I'm always so nervous....nice to know I created a nice illusion though. =) Just need more practice. A LOT more practice...

Hm, we call our professors by their first names. To be honest, I've never heard a professor insist otherwise. I guess it just depends on the person.
